Dragon Fruit, also known as pitaya, is a real team player in this recipe. High in magnesium, fiber and iron, it’s relatively low in sugar (13g for every 100g serving.) Including Resync Collagen blend is this recipe gives an added nutrient boost and also adds body to the smoothie bowl. A few notes before starting this recipe: using a high-powered blender like a Vitamix, especially using the auger, but not strictly necessary; frozen pitaya is becoming more widely available and can often be found in the frozen aisle of Whole Foods; the toppings category doesn’t have measurements because it’s really a matter of personal preference of what and how much you like to add. I strongly recommend including crunchy ingredients like seeds, nuts and coconut chips for textural contrast. This recipe is super easy, delicious and can be tailored to your preferences.

INGREDIENTS

  • 200g Frozen dragon fruit (either using 2 100g packets of frozen dragon fruit or 1 packet and ½ dragon fruit, diced and frozen)
  •  ½ - ¾ Cup non-dairy milk of your choice 
  • 1 Scoop Resync Collagen Blend

TOPPINGS

  • Fresh Raspberries
  • Fresh Blueberries
  • Chia seeds
  • Raw pumpkin seeds
  • Toasted coconut chips
  • Agave syrup (optional)

DIRECTIONS

    • In a liquid measuring cup, combine non-dairy milk with Resync Collagen Blend until the powder is mostly incorporated.
    • Add frozen dragon fruit and non-dairy mixture into blender pitcher, and blend until smooth. You may have to coax ingredients into the bowl of the blender pitcher with auger to aid the blender. 
    • Scrape contents into a bowl and top with blueberries, raspberries, chia seeds, pumpkin seeds and coconut chips. Taste for sweetness and add agave syrup if you prefer. Enjoy!
